For the salad:

  • 1 cup Ancient Harvest Harmony quinoa
  • 1 (5 oz) package washed baby kale
  • 1 ½ cups grape or cherry tomatoes, halved
  • 1 medium cucumber, chopped
  • ½ cup pitted kalamata olives, halved
  • 1 (14 oz) can quartered artichoke hearts in water, drained
  • ½ cup feta cheese crumbles

For the dressing

  • ½ cup packed basil leaves
  • ¼ cup fresh lemon juice
  • ⅓ cup extra-virgin olive oil
  • ¼ teaspoon garlic powder
  • Salt and pepper to taste


  1. Cook quinoa according to package directions and set aside.
  2. Prepare dressing: in a food processor, process basil and lemon juice. Slowly blend in the oil. Add seasoning to taste.
  3. In a large salad bowl, combine quinoa, kale, tomatoes, cucumber, olives, artichokes and feta.
  4. Toss with dressing prior to serving.
