Quinoa Pudding

You ever have rice pudding? Well – let me introduce you to a better version… quinoa pudding! If you want more protein packed grain that keeps you satisfied, try out this dish! This recipe that was created by Grace DelGiudice from @gracemdelaine. It is made with quinoa, coconut milk, a dash of vanilla and cinnamon that is a delicious dessert or breakfast that is decedent and creamy… while still being super good for you!  It’s also super easy to make with only 5 ingredients and 20 minutes of cooking time. Ingredients

½ cup of traditional quinoa
2 cups coconut milk
2 tbsp maple syrup
½  tsp vanilla
¼ tsp cinnamon
¼ tsp salt

Directions

Place ½ cup quinoa into a fine-mesh colander and rinse under cold water.

Drain and transfer to a small pot.

Add 2 cups of coconut milk to the pot.

Bring to a simmer over medium heat and cook for 20 to 25 minutes, stirring every few minutes.

Pudding is done when liquid is absorbed and quinoa is tender.

Stir in maple syrup, vanilla, cinnamon, and salt.

Turn off the heat, cover, and let sit for at least 5 minutes before transferring to a container and refrigerating for a couple of hours or overnight.
