Ingredients

  • ¾ cup Ancient Harvest quinoa flour (quinoa flakes can be pulsed in a food processor to make flour)
  • ¾ cup Ancient Harvest quinoa flakes
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 2 large eggs, lightly beaten
  • ¼ cup milk or nondairy alternative
  • ½ cup whole or part-skim ricotta cheese
  • 1 tablespoon olive oil
  • ⅓ cup chopped fresh basil
  • 1 tablespoon chopped fresh dill
  • ¼ cup chopped fresh chives
  • 1 teaspoon lemon zest

Directions

  1. Preheat oven to 400 degrees F.
  2. Mix all dry ingredients in a medium mixing bowl.
  3. In a separate bowl, whisk ricotta, eggs, and tablespoon olive oil. Whisk in herbs and lemon zest. Add mixture to dry ingredients and stir to combine.
  4. Pour batter halfway up each muffin cup in a greased muffin tin. Bake 10 to 12 minutes, or until a toothpick comes out clean.
