Quinoa Waffles

These amazing waffles are made with quinoa! If you’re looking for a healthy way to up your nutrition in the morning, try out these quinoa waffles! Created by Jenna over at @jennaliveswell.

Ingredients

¾ cups oat flour
1 flax egg
¼ cup cooked Ancient Harvest Traditional Quinoa
1 tsp baking powder
½ tsp cinnamon
pinch of salt
1 tbsp maple syrup
½ cup almond milk
1 tbsp coconut oil, melted
splash of vanilla extract

Directions

In a large bowl, whisk together all ingredients, and then allow the batter to rest for at least 10 minutes while the waffle iron heats up

Spoon the batter onto the iron, and cook according to iron instructions or until crispy

Top with your favorite toppings (such as blueberries, peanut butter & nuts/seeds mix)
