Red Lentil Rotelle Arrabiatta with Chicken Sausage and Kale

Ingredients

  • 2 teaspoons olive oil
  • 1 medium red onion, chopped
  • 6 large garlic cloves, minced
  • ½ pound chicken sausage, casings removed
  • 1 teaspoon crushed red pepper
  • Dash cayenne pepper
  • 2 tablespoons tomato paste
  • 1 (28 oz) can crushed tomatoes
  • 1⅓ cup dry white wine
  • 1 tablespoon red wine vinegar
  • 1 bunch chopped kale, ribs and stems removed (about 3 cups)
  • 1 teaspoon dried oregano
  • ¼ cup fresh basil, chopped
  • 1 (8 oz) package Ancient Harvest Protein Red Lentil Rotini
  • Salt and pepper to taste

Directions

  1. Heat oil in a large skillet. Sauté onion 3 to 5 minutes, or until translucent, adding in garlic for the last minute.
  2. Add sausage and cook, breaking up into bite-sized pieces, until browned, approximately 5 minutes.
  3. Stir in crushed red pepper, cayenne, tomato paste, crushed tomatoes, wine and vinegar.
  4. Bring to a boil. Reduce heat and simmer on medium low, stirring occasionally, 5 minutes.
  5. Add spinach and seasonings, and continue to simmer 10 to 12 minutes.
  6. While sauce is simmering, cook pasta according to package directions.
  7. Drain, rinse, and toss with some of the sauce to coat.
  8. Serve topped with remaining sauce.
