Roasted beet + orange quinoa salad

3 beets, sliced and roasted (or canned beets)
½ cup Ancient Harvest Traditional quinoa, cooked and cooled
1 large orange

For the dressing:
¼ cup maple syrup
2 tbsp apple cider vinegar
2 tbsp olive oil
Pinch of salt salt


Roast the beets at 400 with a little olive oil and salt for about 20 minutes until slightly golden
While they are in the oven, cook your quinoa according to the package (usually need double the amount of water as quinoa)
While that cooks, whisk all the dressing ingredients together in a small bowl until well combined. Feel free to adjust the measurements to your liking!
Once everything is cooling, you can start to pith the orange (easier said than done but feel free to look up youtube videos on how to do this)
Now that everything is prepped and ready, you just have to toss the beets and orange in with the quinoa and pour the dressing on top!
Enjoy! (this is great to have as meal prep too – I made a big batch at the beginning of the week and had it with lunches and dinners as a side or with some lettuce)
