Roasted Garlic, Butternut Squash and Kale Pasta

Roasted Garlic and Butternut Squash Pasta @uncomplicatedchef

Enjoy this Pasta Dish @uncomplicatedchef. The Ancient Harvest gluten free, corn, brown rice and quinoa spaghetti was used for this recipe.

Ingredients

1 package Ancient Harvest gluten free, corn, brown rice and quinoa spaghetti.
½ cup olive oil
2 cups of butternut squash, diced
1 head of garlic
Salt and freshly ground black pepper
½ cup heavy cream
½ cup grated parmesan cheese
1 tsp of nutmeg
2 cups kale sliced thinly
½ cup precooked chopped bacon

Directions

Preheat the oven at 400F.

On a baking sheet pan place diced butternut squash and one garlic head cut in half. Drizzle olive oil, and season with salt and black pepper.

Roast until squash and garlic is nice and soft.
Meantime, boil spaghetti as per package instructions.
On a blender, put the roasted garlic and squash, heavy cream, parmesan cheese and nutmeg. Blend until a nice creamy thick sauce is created.
Pour sauce over pasta, add sliced kale and combine gently.

Add precooked chopped bacon.
