Ingredients

1 tube Ancient Harvest Traditional Polenta, cut in small cubes
2-3 tablespoons Pesto
2 cups broccoli florets
2 cups zucchini, cut in half moon
1 cup grape tomatoes, cut in half

Directions

Add the polenta and the pesto to a bowl and mix well but gently with a spatula.
Heat a large skillet over medium heat and add the polenta. Make sure to leave each sides for 2-3 minutes so the outside is crispy. Add the vegetables and sauté for a couple more minutes. Transfer to a serving dish and enjoy!
