Summer Pasta Salad

This Summer Pasta Salad made with Ancient Harvest Plant-Based Protein Red Lentil Rotini packs a protein punch. It’s equally delicious as a picnic side dish or fresh summer lunch.  Get the recipe from @veggininthecity.

  • 1 package Ancient Harvest Plant-Based Protein Protein Red Lentil Rotini Pasta
  • 1 medium avocado
  • 2 cups spinach
  • 1 cup grape tomatoes
  • 2 tbsp extra virgin olive oil
  • Juice of ½ a lemon
  • 1 tbsp apple cider vinegar
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • Basil for garnish (optional)


  1. Bring a large pot of water to a boil. Add 1 package Ancient Harvest Protein Red Lentil Rotini Pasta and cook for 6 minutes or until tender.
  2. Drain pasta and let cool.
  3. Slice grape tomatoes in half and cut avocado into cube sized pieces. Add spinach, avocado and tomatoes into a large bowl.
  4. In a small dish mix olive oil, lemon juice, apple cider vinegar, sea salt and black pepper.
  5. Add pasta to the large bowl and toss with dressing mixture.
  6. Serve at room temperature or cold out of the refrigerator for a refreshing summer pasta salad. Top with fresh basil and more sea salt and black pepper to taste.
