Quinoa Tabbouleh


Everything you love about tabbouleh – lots of fresh herbs and lightness from lemon – with a twist! This Tabbouleh recipe by @berryfitt is gluten-free and makes for a delicious stand-alone meal or side dish.

Total Time: 15 minutes


  • 1 Cup Ancient Harvest Microwaveable Quinoa with Sea Salt
  • 1/2 cup cherry tomatoes, halved
  • 1/2 english cucumber, diced
  • 1 avocado, diced
  • Handful of fresh spinach
  • 1/4 cup cilantro, minced
  • 2 tablespoons of mint, minced
  • 2 tablespoons olive oil
  • Juice of half a lemon


  • Chop cucumber, tomato, spinach and herbs
  • Add chopped cucumber, tomato, spinach, and herbs to a bowl
  • Top with 1 cup of Ancient Harvest Microwaveable Quinoa
  • Pour olive oil and lemon juice over quinoa and veggies, and toss to combine. (Warm quinoa will slightly wilt the spinach, which is what you want!)
  • Fold in diced avocado and serve
