Thai Pasta Salad @radicallyrooted

Enjoy this Thai Pasta Salad @radicallyrooted. For this recipe the Ancient Harvest Gluten Free Corn, Brown Rice and Quinoa Rotini Pasta was used.



1 box of Ancient Harvest Corn, Brown Rice and Quinoa Rotini Pasta
1 cup cabbage, shredded
1 cup carrots, shredded
1 cup cucumbers, cut in small cubes (1cm)
1 clove minced garlic
4 scallions, chopped


1 tbsp maple syrup
¼ cup peanut butter
2 tbsp rice vinegar
¼ cup orange juice or pineapple juice
1 tbsp coconut aminos


Begin by cooking penne pasta according to the directions of the packaging. Drain and rinse with cold water to stop the cooking process.
