Tuscan Pasta Salad


While this pasta already delivers a serving of veggies on its own, we LOVE the addition of adding fresh Mediterranean vegetables in this Tuscan Pasta Salad because there is no such thing as too many vegetables! This pasta salad is perfect for summer picnics, backyard BBQs, or a great dinner for those lighter, meatless-meal kind of nights.


1, 8 oz box Ancient Harvest Protein Penne Pasta
1, jar artichoke hearts, cut in half
1 zucchini, sliced into half-moon
½ medium red onion, diced
1 bell pepper, diced
¾ cup grape tomatoes, halved
1 TBSP minced garlic
2.5 TBSP lemon juice
3 TBSP Olive Oil
1 tsp fresh thyme


Cook pasta according to the directions on the box and set aside.

In a sauté pan, heat olive oil and minced garlic until fragrant. Remove from heat and add thyme, tomatoes, bell pepper, artichoke hearts, onion, tomatoes, and zucchini until coated in oil. Add pasta and stir.

Transfer the pasta mixture to a bowl and add the lemon juice. Mix and serve!

Optional: top with fresh ground pepper and fresh parsley
