Tuscan Pasta Salad


While this pasta already delivers a serving of veggies on its own, we LOVE the addition of adding fresh Mediterranean vegetables in this Tuscan Pasta Salad because there is no such thing as too many vegetables! This pasta salad is perfect for summer picnics, backyard BBQs, or a great dinner for those lighter, meatless-meal kind of nights.


  • 1, 8 oz box Ancient Harvest™ Veggie Penne
  • 1, 12 oz bag frozen artichoke hearts, thawed
  • 1 zucchini, sliced into rounds and then quartered
  • ½ medium purple onion, diced
  • 1 bell pepper, diced
  • ¾ cup grape tomatoes, halved
  • 3 TBSP capers
  • 1 TBSP minced garlic
  • 2.5 TBSP lemon juice
  • 3 TBSP Olive Oil
  • Pepper
  • 1 tsp fresh oregano


  1. Cook pasta according to directions on box and set aside.
  2. In a sauté pan, heat olive oil and minced garlic until fragrant. Remove from heat and oregano, tomatoes, bell pepper, artichoke hearts, onion, tomatoes, and zucchini until coated in oil. Add pasta and stir.
  3. Transfer pasta mixture to a bowl and add the lemon juice and capers. Mix and serve!

Optional: top with fresh ground pepper and fresh parsley
