Veggie Quinoa Bake

Enjoy this quinoa dish @alexandraavocado. We used Ancient Harvest Harmony Quinoa to make this dish.


1 ½ cups Ancient Harvest Harmony Quinoa
3 cups of your favorite veggie broth
5 cloves of garlic, chopped
1 yellow onion, chopped
1 yellow bell pepper, chopped
1 zucchini, chopped
1 tbsp of each parsley and cilantro
2 tbsp extra virgin olive oil
Salt & Pepper to taste
Red pepper flakes to taste


Preheat oven to 400F and add chopped garlic, onion, peppers, and zucchini to a baking dish.
Drizzle and toss all veggies in olive oil.
Bake for about 20 minutes.
While your veggies are in the oven, add Ancient Harvest quinoa and veggie broth to a pot and cook per package instructions.
Add cooked quinoa, red pepper flakes, salt, and pepper to veggies in the baking dish and mix evenly. Broil for 5 minutes.
Top with fresh herbs and enjoy!
