
Creamy Avocado Pesto Rotini

Ingredients
- 1 box Ancient Harvest Gluten-Free Rotini Pasta
- 1 medium avocado
- 2 cups baby spinach
- ½ cup packed fresh basil, stems removed
- 3 to 6 tablespoons low-sodium vegetable broth
- 2 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 large garlic clove, peeled
- Salt, to taste
- Optional topping: grilled shrimp
Directions
- Cook rotelle according to package instructions, until slightly al dente.
- Drain and rinse in a colander with cold water to stop the cooking process.
- Meanwhile, place all other ingredients in your blender, starting with 3 Tbsp. of broth.
- Blend until fully smooth.
- Heat sauce in the cooking pot over medium-low.
- Add pasta and stir gently until heated through. Thin out with broth as desired.
- Season with salt to taste, then serve hot. Optional: top with grilled shrimp.
