While it may not be directly tied to the original meaning behind the holiday, we love the way the green of Saint Patrick’s Day seems to herald spring. A fresh, new season is around the corner – one filled with flowering greenery and farmers market produce. Nothing screams “green” quite like a fresh basil pesto, and this gluten-free spaghetti pasta dish – made with toasted almonds, coconut milk, plenty of garlic and a dash of dry white wine – takes everything to a whole new level. And while it’s full of savory flavor and contrasting textures, it’s completely free of dairy and gluten.
