1 box of Ancient Harvest Plant-Based Protein Red Lentil Rotini Pasta
1-2 tbsp vegan butter
1 tsp garlic, chopped
1 tsp lemon zest
1 lb chicken sausage, cooked and cut in small cubes
2 tomatoes, cut in small cubes
1 cup mozzarella, cut in small cubes
2 tbsp fresh basil, chopped
In a skillet, combine vegan butter, garlic and a few drops of lemon zest and cook chicken sausage and tomatoes until thoroughly cooked.
At the same time, make pasta (as directed on the box).
Combine more of the vegan butter and garlic blend and add to skillet.
Drain pasta and mix cooked pasta with chicken sausage and tomato blend.
Add sliced mozzarella and fresh basil and enjoy!
