Roasted Beet + Orange Quinoa Salad

Ingredients

Bowl Ingredients
3 beets, sliced and roasted (or canned beats)
½ cup Ancient Harvest US Quinoa, cooked and cooled
1 large orange

Dressing
¼ cup maple syrup
2 tbsp apple cider vinegar
2 tbsp olive oil
Pinch of salt

Directions

Roast the beets at 400F with a little olive oil and salt for about 20 minutes until slightly golden.
While they are in the oven, cook your quinoa according to the package (usually need double the amount of water as quinoa).
While that cooks, whisk all the dressing ingredients together in a small bowl until well combined. Feel free to adjust the measurements to your liking!
Once everything is cooling, you can start to pith the orange.
Now that everything is prepped and ready, you just have to toss the beets and orange in with the quinoa and pour the dressing on top!
