Ingredients
Ingredients for Chips:
1 package of Ancient Harvest Heat-and-Eat Polenta Basil and Garlic
2-3 tsp olive oil
Ingredients for Avocado Ranch Dip:
⅓ cup mashed avocado
½ cup plain greek yogurt
1 Tbsp lemon juice
1 Tbsp unsweetened almond milk
½ Tbsp dijon mustard
1 tsp chopped fresh parsley
½ Tbsp fresh chopped chives
½ Tbsp dried dill
1 tsp dried garlic powder
Directions
Directions for Chips:
Heat up air fryer to 400 degrees
Cut ends off of polenta tube
Cut polenta into thin round slices
Place half of the rounds into your air fryer. Ensure they do not touch for the ultimate crisp. (You will most likely have to make these in 2-3 batches depending on the size of your air fryer)
Spray with 1 tsp olive oil
Cook in the air fryer for 12-22 minutes or until golden brown. (Please note that every air fryer is different – check the chips to ensure they do not burn)
Place on wire rack to cool
Repeat as many times as needed to cook all of the polenta
Directions for Dip:
Mix all ingredients for dip together until well combined.
