Ingredients

1 tube Ancient Harvest Traditional Polenta, cut in cubes
2 cans of chickpeas, drained and rinsed
Avocado Oil Spray
Salt and pepper to taste
1 feta block, cut into 3 equal strips
½ tsp cumin
Pinch of cayenne pepper
½ tsp paprika
1 jar of your favorite tomato sauce
Red pepper flakes

Directions

Preheat the oven to 450°F.

Heat a cast iron pan in the oven for 5 minutes, remove from the oven and add the avocado oil spray.
Add chickpeas, all the spices, and the tomato sauce. Mix well.
Place feta into the tomato chickpea sauce.

Bake for 15-20 minutes or until feta has softened.

At the same time air fry the polenta or if you don’t have an air fryer you can place it in the oven at the same time on a baking sheet.

Remove from the oven, add the polenta to the tomato sauce mix and mix well. Serve
