Ingredients

  • 1 Yellow Onion, diced
  • 3 Carrots, diced
  • 2 Celery Stalks, diced
  • 4 Cloves Garlic, minced
  • Salt & Pepper
  • 4 cups Chicken Broth
  • 1 1/4 cups Ancient Harvest Traditional Quinoa, uncooked
  • 1 can Diced Tomatoes
  • 1 8 oz can Tomato Sauce
  • Italian Seasoning
  • 2 cups Baby Spinach
  • 1 1/2 cups Heavy Cream
  • Parmesan Cheese
  • Red Pepper Flakes

Directions

1. Heat oil in a dutch oven or large pot over medium-high heat. Add onions, carrots, celery, 4 garlic, and salt & pepper to the pot.
2. Once sautéed, add chicken broth, uncooked Ancient Harvest Traditional Quinoa, diced tomatoes (undrained), tomato sauce, and Italian Seasoning to the pot and stir.
3. Add more salt & pepper and bring to a boil. Reduce the heat and simmer partially covered for 20-25 minutes.
4. Stir in baby spinach and heavy cream. Add parmesan cheese and red pepper flakes.
