Mexican Street Corn Quinoa

Mexican Street Corn Quinoa is the perfect side dish to spice up your meal. This dish captures the flavors of traditional elote in a nutritious quinoa! Our recipe is easy to prepare and full of fresh, vibrant ingredients!

Ingredients

  • 1 cup Ancient Harvest Traditional Quinoa 
  • 1/4 cup Mayo
  • 1 Clove Minced Garlic
  • 1/4 cup Buttermilk
  • 1/2 tsp Chili Powder
  • 1/2 tsp Salt
  • Lime Juice, from 2 whole limes
  • 2 cups Sautéed Baby Bell Peppers, sliced
  • 2 cans Sweet Corn
  • 1 can Black Beans
  • 1/2 cup Cilantro, chopped

Directions

  1. Bring 1 cup quinoa and 2 cups water to a boil. Lower heat and let simmer for 15 minutes.
  2. In a medium sized bowl, combine mayo, garlic, buttermilk, chili powder, salt, and lime juice.
  3. In a separate, large bowl, combine cooked quinoa, sautéed baby bell peppers, corn, black beans, and cilantro. Stir together. Then pour in the mayo mixture.
  4. Enjoy!
