  1. Blend quinoa in a blender to make quinoa flour.
  2. To the blender, add oat milk, coconut sugar, eggs, vanilla extract, and salt. Blend until combined.
  3. Let the batter sit for 10 minutes.
  4. Heat a large pan over medium-high heat. Add a little coconut oil to the pan (enough just to coat the bottom of the pan).
  5. Pour a ladle full of batter into the center of the pan. Gently tilt the pan so that the crepe batter slowly moves to coat the pan. Once the crepe looks set, flip. Then cook that side. Take of the pan and place the crepe onto a plate. Repeat until all the batter is used.
  6. Top your crepe with jam, chocolate, fruit, or however you would like!
