Quinoa Meatballs

Quinoa Meatballs are a delicious and nutritious alternative to traditional meatballs. Made from cooked quinoa and ground beef, these meatballs are packed with protein and fiber. These meatballs can be served with sauce for a delicious appetizer or over spaghetti for a satisfying meal!

Ingredients

  • 1 lb ground beef
  • 3/4 cup Ancient Harvest Traditional Quinoa, cooked
  • 1/4 cup diced yellow onion
  • 1/4 cup grated zucchini
  • 2 tbsp ketchup
  • 1 clove minced garlic
  • 1 tbsp soy sauce
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/4 tsp oregano
  • 1/4 tsp thyme
  • 1 egg, beaten

Directions

  1. Preheat oven to 450F and line a baking sheet with aluminum foil.
  2. In a large bowl mix together: ground beef, cooked quinoa, diced yellow onion, grated zucchini, ketchup, minced garlic, soy sauce, black pepper, salt, oregano, thyme, egg.
  3. Shape into 16-20 balls, depending on your wanted size.
  4. Cook in the oven for 15-17 minutes.
