Delicious, cozy, satisfying – a hot and hearty breakfast casserole is something to get out of bed for. Whether savory or sweet, it’s a great thing to make for a weekend crowd over the holidays as it’s easy to put together and (bonus!) it makes for wonderful leftovers.

Here are some gluten-free breakfast casserole recipes that we can’t wait to try:

Apple Pie Millet Breakfast Casserole, Healthful Pursuit

With two of our favorite ancient grains (amaranth and millet) and the tempting flavors of apple pie, this vegan breakfast casserole is sure to be a crowd-pleaser. We especially love the combination of a soft, dense filling and a crunchy topping made of chopped walnuts and coconut sugar.

Quinoa Quiche, Noshing With the Nolands

Using quinoa instead of a traditional pie crust, this gluten-free twist on a classic quiche is full of ancient grain flavor and nutrition. The recipe calls for Swiss chard, broccoli florets and cheddar cheese but you could easily adapt it to feature your personal flavor of quiche (or whatever produce happens to be in your fridge.)
