Quinoa Salad with Spinach and Roasted Strawberries

Ingredients

For the dressing:

  • ¼ cup red wine vinegar
  • 2 tablespoons orange juice
  • 1 tablespoon orange zest
  • 1 tablespoon honey
  • 1 teaspoon dijon mustard
  • ¼ cup extra virgin olive oil
  • Sea salt and fresh ground pepper to taste

For the salad:

  • 1 cup Ancient Harvest Harmony Quinoa
  • 1 pound strawberries, hulled and halved lengthwise
  • 1 tablespoon runny honey
  • 4 cups baby spinach
  • 1 bunch spring onions, white and light green parts, thinly sliced
  • ⅓ cup roasted sunflower seeds or sliced almonds
  • *Optional: ½ cup goat cheese crumbles

Directions

  1. Preheat oven to 400°F.
  2. Prepare quinoa according to package directions and set aside.
  3. Toss strawberries with honey and place in a deep baking pan. Allow to roast in oven for 15-20 minutes, until the juices are thick and bubbly. Set aside to cool.
  4. While strawberries are roasting, prepare the dressing: in a small bowl, whisk together the vinegar, orange juice, orange zest, honey, and mustard. Gradually whisk in the olive oil and season with salt and pepper.
  5. In a large bowl, combine quinoa with roasted strawberries, spinach, onion, sunflower seeds or almonds, and goat cheese crumbles if using.
  6. Add dressing before serving and mix well to coat.
