Cheesey Quinoa Balls

These bite-sized Cheesy Quinoa Balls are packed with protein, fiber, and cheesy deliciousness! They are the perfect, easy snack, appetizer, or light meal.

Ingredients

  • 1/2 cup Ancient Harvest Quinoa
  • 1 tbsp olive oil
  • 1/2 onion, chopped
  • 1 garlic clove, minced
  • 1/2 cup canned chopped tomatoes
  • 1/2 cup vegetable stock
  • 1/2 cup shredded cheddar cheese
  • 1 tbsp basil leaves, chopped
  • 1 egg, beaten

Directions

  1. Preheat oven to 350F.
  2. Heat olive oil in a large pan over medium heat. Sauté the onions and garlic for about 5 minutes or until the onions become translucent.
  3. Then, add the tomatoes, stock, and uncooked quinoa. Stir together and bring to a boil, reduce the heat to low, cover and allow to simmer for 15 mins.
  4. Turn the heat off and leave the quinoa to sit covered for 5 mins.
  5. Then, stir in the cheddar cheese and basil. Allow to cool, then stir in the beaten egg.
  6. Form tablespoon sized balls and place on a sprayed baking pan.
  7. Bake in the oven for 25 mins or until golden.
