This Alfredo recipe delivers all the rich flavor and velvety texture you love, but with a plant-based twist! You won’t even believe it is dairy-free! Get ready to twirl your fork into a bowl of pure comfort.

Ingredients

  • 1 1/2 cup raw cashews
  • 6 garlic cloves, minced
  • 1 tbsp lemon juice
  • 1/2 yellow onion, diced
  • 1/4 cup nutritional yeast
  • 2 tbsp olive oil
  • 2 cups almond milk
  • 1 tsp salt
  • 1 tsp pepper
  • 1 box Ancient Harvest pasta

Directions

  1.  Allow your raw cashews to soak overnight in a bowl of water.
  2. Cook your Ancient Harvest Pasta!
  3.  Heat olive oil in a small pan over medium heat. Add the chopped onion and garlic and sauté for 5 minutes or until onion is translucent. Remove from heat.
  4. Drain the cashews and discard the soaking water.
  5. Add the cashews, onions and garlic, almond milk, nutritional yeast, lemon juice and salt and pepper. Blend until very smooth.
  6. Pour over pasta and enjoy!
