Winter Quinoa Salad Bowl

Winter Quinoa Salad Bowl Ingredient
- 2 cups cooked Ancient Harvest™ Inca Red Quinoa
- 2 cups chopped beets
- 1 cup pomegranate seeds
- 4 ounces feta cheese
- 2 cups chopped apples
- 2 cups chopped fresh baby spinach
- Dressing of choice
- Toss all ingredients together and serve immediately.
- For Mason jar assembly, layer in order: ½ cup quinoa, ½ cup beets, ¼ cup pomegranate seeds, 1-ounce feta cheese, ½ cup chopped apples, 1 cup spinach. Seal and store in the fridge 4-5 days. Shake with dressing when ready to serve.
