Quinoa Chocolate Zucchini Brownies

Ingredients
- 1 cup cooked Ancient Harvest Quinoa, any variety
- 1 ½ cups shredded zucchini
- ½ cup unsweetened cocoa powder
- ⅓ cup maple syrup
- ½ cup loosely packed avocado
- ¼ cup coconut oil
- 2 eggs
- 1 tsp vanilla
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ teaspoon salt
- 3 ounces melted dark chocolate
Directions
- Preheat oven to 350 degrees F.
- Combine all the ingredients in a food processor or high speed blender and blend well.
- Pour the batter into an 8 X 8 baking dish coated with cooking spray or lined with parchment lined paper.
- Bake for 35 to 40 minutes, or until edges are firm, and center fairly firm. (“Toothpick test” may not work, as brownies will continue to solidify with cooling.)
- Let the brownies cool completely before removing them from the pan. Store in an airtight container in the fridge.
