The short days of winter are (almost) over and schedules are beginning to move full speed ahead again after some January and February hibernation; which means our meals have to keep up with all of our springtime plans. Luckily, plant-forward meals can provide us with the nutrients we crave on longer, warmer days. Plus, what makes these dishes even more fun is the colorful veggies that are beginning to fill our fridges, and our plates.
With a base like quinoa or protein pasta, veggies can be the perfect addition to turn a quickly-prepared meal into something beautiful. And though we don’t always have time to think out the whole menu, a few wholesome ingredients can become an energizing and filling meal.
