Meet Millet

While it has long been popular in many corners of the globe, millet is just now making a name for itself in the United States. The gluten-free ancient grain comes in several varieties and while it may be loved most for its nutty flavor and slightly crunchy texture, it can also be praised for being quite nutrient-dense. For these and other reasons, millet is finally (and rightfully) making its way onto restaurant menus and into household pantries. Here are some ways to join in on the fun:
