Snow angels, the holidays, big mugs of rich hot chocolate… Winter brings with it a lot of exciting things – but, unfortunately, an abundance of fresh produce is not one of them. That doesn’t mean we are relegated to eating things out of jars and cans, though; in fact, with a little know-how, eating well through winter can be easy and fun.
Just follow these simple tips to eat seasonally in winter – and enjoy doing it, as well.
Get in touch with your roots.
Roasted root veggies + quinoa = simple, seasonal meals packed with nutrients and contrasting flavors and textures. But while we enjoy a simple bowl of quinoa topped with warm veggies, our love of seasonal roots (think sweet potatoes, carrots, parsnips, beets and more) doesn’t stop there!

Learn to love soup.
Obviously, soup is a wintertime staple – but that doesn’t mean you should merely stock up on store-bought varieties. A big pot of filling, satisfying soup is one of the easiest things to make at home – and we love filling it with all manner of in-season winter veggies.

Don’t skip the salad.
While the phrase “salad season” may not traditionally mean December, you’ll be pleased to discover how much tasty, salad-ready produce hits its seasonal peak in winter. You’ve got leafy greens like kale and collards, crunchy cabbage and radicchio, tart citrus, fennel, carrots, red onions – and even sweet, colorful fruit like pomegranates and persimmons. So whip up a light, flavorful dressing and enjoy!
