Salad:
2 cups USA Grown Traditional Quinoa
2 cups chopped, fresh spinach
1 cup chopped cucumber
1 cup halved cherry tomatoes
1 large avocado
2 green onions
Salt and pepper to taste
Dressing Ingredients:
¼ cup olive oil
1 clove of minced garlic
2 tbsp lemon juice
1 tbsp golden balsamic vinegar
1 tsp maple syrup
Sea salt and pepper to taste
Chop your ingredients and mix the dressing while you cook your quinoa. Let it cool. Mix salad ingredients. Drizzle the dressing on top and mix in.
