1 Eggplant, cut in long thin slices
1 cup Ancient Harvest traditional quinoa
1 tomato, cut into large cubes
Feta cheese
1 tbsp fresh sage
Slice eggplant and grill
Cook quinoa according to package.
Grill tomatoes.
Layer eggplant, then top with quinoa + feta + tomatoes + herbs.
