Quinoa Tortillas

Enjoy this quinoa tortilla recipe that is packed with protein and fiber! This was created by Elisabeth Michaels @zazachef_cook.eat.repeat

These tortillas are so good and so easy to make. Soaking the quinoa helps remove the nutty taste of the quinoa. It actually doesn’t even taste that much like quinoa.

Add any toppings you want, here I added baby bella mushrooms, bell peppers, red cabbage, cilantro, jalapeño, and hot sauce.

You can play with the thickness by adding more water but be careful not to make it too thin since it will start breaking apart.

Plain quinoa tortilla
Prep Time: 5 minutes + 5 hours for soaking

Ingredients

1 cup Ancient Harvest Traditional Quinoa
cup water
½ tsp salt
½ tsp garlic powder

Directions

Soaking

  • Transfer the quinoa to a bowl
  • Add water to cover the quinoa plus 2-3 inches more
  • Let it soak for 4-5 hours or overnight

Making Quinoa Tortillas

  • Rinse the quinoa well
  • Transfer to the VitaMix and add the water, salt, and garlic powder
  • Blend well for about 1 minute

Cooking the tortillas

  • Heat up a flat pan to medium-high
  • Add a little avocado oil spray to the pan
  • Add ¼ cup of the mixture to the pan and quickly spread it in a circle with a small spatula. The tortilla will start cooking quickly so you will have to be fast and careful not to burn yourself.
  • Flip after 2-3 minutes and cook for another 2-3 minutes
  • Voila! Add all the toppings you want and enjoy!!!!

Toppins

  • Baby Bella Mushrooms, saute
  • Red cabbage, sliced thinly on a mandoline
  • Bell peppers, yellow and red, cut in julienne and saute
  • Jalapenos, sliced thinly on a mandoline
  • Cilantro
  • Your favorite hot sauce
  • Pretty much any toppings you like
