One Pan Chicken and Quinoa

Ingredients

  • 2 Boneless/Skinless Chicken Breasts
  • Italian Seasoning
  • Salt & Pepper
  • Dijon Mustard
  • 1-2 tbsp Olive Oil
  • 1 Yellow Onion, diced
  • 1 Red Bell Pepper, diced
  • 1 Yellow Bell Pepper, diced
  • Broccoli Florets
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 cup Ancient Harvest Traditional Quinoa 
  • 2 cups Chicken Broth
  • Lemon juice from 1 whole Lemon
  • Basil, chopped

Directions

1. Slice chicken breasts into however big of pieces you prefer. Put the chicken in a bowl and season with Italian seasoning, salt & pepper, and dijon mustard. Toss to coat.
2. Heat a large skillet of olive oil on medium heat. Place chicken in the pan and cook for about 3-4 minutes on each side, or until the chicken
has browned. Then take chicken out and set aside.
3. To the pan add onions and peppers. Once those are cooked, add in broccoli florets with salt & pepper, onion powder, and garlic powder.
4. Toss together on heat for about a minute and then pour in uncooked Ancient Harvest Quinoa. Next, pour in Chicken Broth and stir.
5. Put the chicken back into the pan and bring to a boil. Once boiling, lower heat and cover. Let simmer for 25 minutes, until all the broth is absorbed.
6. Once done, squeeze fresh lemon juice over quinoa and garnish with chopped basil.
