Arugula and Butternut Squash Fall Pasta

Protein Rotini, Arugula+Butternut Squash Fall Pasta

Enjoy this pasta dish @basilandbiceps. Ancient Harvest Plant-Based Protein red lentil rotini pasta was used for this recipe.

Ingredients

1 package Ancient Harvest Plant-Based Protein red lentil rotini pasta
2 cups Arugula
½ cup dried cranberries
½ cup toasted pecans, chopped
2 cups butternut squash, cubed
Avocado oil spray
½ tsp cinnamon

 

Sweet Dijon mustard vinaigrette

3 tbsp grainy mustard
2 tbsp Dijon mustard
2 tbsp avocado oil
2 tbsp maple syrup

Directions

Preheat the oven at 400F

Toss cubed butternut squash with avocado oil and cinnamon and roast in the oven for 30 min, set aside.

Cook the rotini pasta according to the directions of the packaging. Drain and rinse with cold water to stop the cooking process, set aside.

Mix all the ingredients under vinaigrette set aside.

In a large bowl mix the pasta, arugula, pecans, butternut squash and vinaigrette together. Voila!
