Cashew Thai Quinoa Salad

Enjoy this quinoa dish @marissaswholelife. We used Ancient Harvest Harmony Quinoa to make this dish.

Ingredients

1 cup Ancient Harvest Harmony cooked quinoa
1 cup Cucumber, cut in small cubes
1 cup purple cabbage, chopped
1 red bell pepper, cut in small cubes
½ cup Cashew Butter
2 Tbsps of Coconut Aminos
2 Tbsps of White Vinegar
2 Tbsps of Agave
1 Tbsp of Lime Juice
1 Tbsp of Minced Garlic
Spices to taste
1 tsp Chili Powder
1 tsp Ginger Powder
Sea Salt & Pepper to taste

Directions

Add quinoa to a mixing bowl.

Add in chopped veggies (cucumber, purple cabbage, and red pepper).

Mix the dressing ingredients together and pour over quinoa salad.
Mix until well combined and place in the refrigerator until ready to serve!

The colder the better!
