Lemon Summer Pasta

Lemon Summer Pasta is refreshing, light, and delicious! Brighten your table with this simple, yet tasty meal that is an ideal choice for a weeknight dinner. This dish will definitely have you going back for seconds!

Ingredients

  • 2 Lemons
  • 1-2 Peppers
  • 1 Onion
  • 3 Cloves of Garlic (or spoonful of jarred)
  • Red Pepper
  • Fresh Parsley
  • Stock (veggie or chicken)

Directions

1. Boil water for pasta and cook your Ancient Harvest Rotini Pasta.
2. Heat up olive oil to coat bottom of large pan on medium heat.
3. Add chopped onions and peppers. Once they’re quite translucent, slight browning, turn down heat slightly add the garlic and cook moving garlic around for about 30-45 seconds.
5. Add stock, enough to cover the veggies and bring to a simmer.
6. Let the stock reduce down a bit, then add lemon juice from a whole lemon and your lemon zest from an entire lemon, and set to low.
7. Add the Ancient Harvest Rotini Pasta and mix.
8. Grate Parmesan, add chopped parsley and red pepper into the pan and mix.
9. Enjoy!
