Enjoy this Quinoa Bowl by @ mb_withasideofpb. We used Ancient Harvest Traditional Quinoa to make this dish.
1 cup Ancient Harvest Traditional Quinoa
2 tbsp olive oil
1 red bell pepper, diced
1 eggplant, cubed
1 red onion, diced
1 zucchini, cubed
Salt and pepper to taste
½ cup kalamata olives
½ cup sundried tomatoes
¼ cup banana peppers
1 tbsp balsamic vinegar
Salt, pepper, and oregano
½ cup feta, crumbled
¼ cup of fresh basil
Cook the quinoa according to package instructions.
Toss vegetables in olive oil, salt, pepper: red bell pepper, eggplant, red onion, zucchini. Roast veggies at 375° for 45 minutes.
Remove and let cool.
Add veggies to quinoa with kalamata olives, sundried tomatoes, and banana peppers.
Drizzle with balsamic vinegar and season with salt, pepper, and oregano.
Add feta and fresh basil and toss to combine!
