Mexican Quinoa Salad


Enjoy this Mexican Quinoa Salad Recipe by @jennaliveswell. We used Ancient Harvest Traditional Quinoa to make this dish.

1 cup Ancient Harvest Traditional Quinoa
2 cups water or broth
½ can corn, rinsed
1 can black beans, rinsed
½ cup fresh cilantro, chopped
¼ cup onion, chopped

¼ cup salsa
¼ cup olive oil
1 clove garlic, minced
juice from half a lime
pinch of salt
1 tsp cumin
1 tsp pepper


Cook the quinoa in the water or broth as directed on the package

Let quinoa cool to room temperature
Combine all salad ingredients in a large bowl
In a separate small bowl, whisk together all the dressing ingredients
Poor dressing over quinoa salad and stir well to combine & enjoy!
Store covered in the fridge for up to a week!
