Mexican Street Corn Pasta

Experience the delicious flavors of Mexican street corn in a whole new way with this creamy and delicious pasta!

Ingredients

  • 1 box Ancient Harvest Rotini 
  • 2 ears of corn, corn taken off cob
  • 3 tbsp cilantro, chopped
  • 1 jalapeño, seeds taken out and diced
  • 2 green onion, chopped
  • 1 red onion, diced
  • 1 tomato, diced
  • 1 1/2 cups shredded chicken

Dressing:

  • 2/3 cup cotija cheese
  • 1 tbsp olive oil
  • 2 tbsp water
  • 1/4 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • salt & pepper
  • 1 lime, juiced

Directions

  1.  Prep your veggies and cook Ancient Harvest Rotini according to box.
  2.  In a medium bowl mix together dressing ingredients.
  3. In a skillet, heat 2 tbsp olive oil and roast your corn.
  4. In a large bowl, pour your cooked pasta, shredded chicken, and prepped veggies. Mix together and then add the dressing and combine.
  5. Scoop some of the pasta into a bowl, top with cilantro and cotija cheese, and serve!
