Ingredients

  • Ancient Harvest Red Lentil Protein Pasta
  • Cherry Tomatoes
  • Black Olives, diced
  • 1/2 Yellow Pepper, diced
  • 1/2 Orange Pepper, diced
  • Pepperoncinis
  • Parmesan Cheese, grated
  • Basil
  • Parsley
  • Cucumber, diced
  • 1/3 cup White Wine Vinegar
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 tsp Oregano
  • 3 tbsp Juice from Pepperoncini Jar
  • 1/2 cup Olive Oil

Directions

  1. To prep, cook pasta according to the instructions on the box and cut your vegetables.
  2. Make the dressing by combining white wine vinegar, salt, pepper, oregano, olive oil, and pepperoncini juice.
  3. Let the pasta cool and combine vegetables with the pasta. Pour the dressing on top and mix together.
  4. Top with parmesan cheese and enjoy!
