Pumpkin Mac & Cheese

Enjoy this pasta dish @carlieeeeats. We used Ancient Harvest Corn, Brown Rice and Quinoa gluten free penne pasta to make this dish.

Ingredients

8-9 oz Ancient Harvest Corn, Brown Rice and Quinoa gluten free penne pasta
2 tbsp butter⠀
2 tbsp flour⠀
1 ½ cup milk (I used oat)⠀
½ cup pumpkin purée ⠀
1 cup cheese (I shredded gruyere, mozzarella and some brie)⠀
2 tsp Dijon mustard ⠀
¼ tsp nutmeg⠀
½ tsp garlic powder⠀
Salt & pepper to taste ⠀

Directions

Over medium heat melt butter with flour. Stir continuously until a slurry is formed. Then add 1 cup of milk, cheese, pumpkin, mustard and spices. Mix until cheese melts and everything is smooth. ⠀

Prepare your pasta, saving some pasta water. I used Ancient Harvest corn/brown rice/quinoa penne which cooks in just 6 minutes.

Once pasta is cooked, add cheese sauce, the remaining milk and a splash of pasta water.

Season to taste and serve immediately. Sauce will thicken as it cools!
