Ingredients

  • 2 cups almond flour
  • 1 cup quinoa flour: make by blending 1 1/4 cups of Ancient Harvest Traditional Quinoa
  • 2 teaspoons baking powder
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • Pinch of sea salt
  • 3 large eggs
  • 1/4 cup melted coconut oil
  • 1/2 cup maple syrup
  • 1/4 cup unsweetened applesauce
  • 1/4 cup coconut yogurt
  • 1 cup carrots, grated
  • 1/2 cup almonds, chopped

Directions

  1. Preheat the oven to 350F. Grease a bundt pan and set aside.
  2. In a large bowl, whisk together all dry ingredients.
  3. In a separate bowl, combine the wet ingredients.
  4. Pour the wet ingredients into the dry ingredients and stir until fully combined. Add in carrots and nuts.
  5. Transfer the cake batter to the prepared bundt pan. Bake for 40 – 45 minutes until a cake tester inserted comes out clean.
  6. Allow cake to rest for 10 minutes, then flip the pan onto a plate for the cake to come out.
  7. Let cool before serving.
