Slow Cooker Sweet Potato and Black Bean Soup

Ingredients

  • 1lb of dried black beans (soaked overnight, rinsed and drained)
  • 1 medium onion, diced
  • 2 large sweet potatoes, peeled and cut into 1/2 -inch pieces
  • ¾ cup uncooked Ancient Harvest quinoa
  • 1 (15 oz) can no-salt added diced tomatoes
  • 1 (15 oz) can crushed tomatoes
  • 1 red bell pepper, chopped
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • ⅛ teaspoon cayenne pepper
  • 1 teaspoon smoked paprika
  • 8 cups water or 4 cups water and 4 cups chicken or vegetable stock
  • 1 tablespoon fresh lime juice
  • Sea salt and pepper, to taste

Directions

  1. Combine all ingredients in a 6 or 7- quart slow cooker.
  2. Cook on low 8 hours or on high 4-5 hours.
  3. Top with cilantro to serve.
