Vegan Pumpkin Alfredo

Protein Penne, Vegan Pumpkin Alfredo

Enjoy this pasta dish @eatsbyaustin. For this recipe we used Ancient Harvest Plant-Based Protein Green Lentil Penne Pasta.

Ingredients

1 box of Ancient Harvest Plant-Based Protein Green Lentil Penne Pasta, cooked according to the package
½ heaping cup pumpkin purée
½ cup raw cashews, soaked
1 ½ cup dairy free/nut milk
3 cloves garlic, minced
2 tbsp olive oil
1 tsp pumpkin pie spice
½ tsp cayenne pepper
2-3 sage sprigs
salt and pepper to taste

Directions

Soak raw cashews overnight in warm water and a pinch of salt; drain and rinse.
In a saucepan, heat olive oil, garlic, and sage; sauté for about 5 minutes on medium heat, stir in pumpkin purée and remove from heat; remove sage.
Add the above mixture, soaked cashews, spices, and nut milk to a blender and blend until creamy.

Serve warm over Ancient Harvest Plant-Based Protein Green Lentil Penne Pasta.
